It's Banana Lover's Day! Seeing as I haven't done a theme post in almost two months, I figured this was the perfect occasion to showcase my love for the fruit oft referred to as "nature's candy bar." Got extra bananas on hand? Here are 15 ways to use them up:
Fat Free Banana Bread – It is so soft and buttery.
This bread actually wasn't supposed to be fat-free. In fact, I was quite upset upon discovering—midway through preparing the recipe—only about a teaspoon's worth of coconut oil lingered in my sad little jar. (Note to self: gather all ingredients before starting to cook a recipe. Will I ever learn?)

Unless you've been living under a rock, you've probably seen the idea of whipping frozen banana until it resembles the exact texture of soft-serve ice cream. Wrong-o! In fact, I'd argue that brown, mushy bananas are better than yellow (and goodness gracious, better than green!). Brownness signifies ripeness, so darker bananas yield sweeter fruit. Especially for those interested in eating less sugar, these fruits are perfect for smoothies, puddings, cakes, or even the raw fudge I've been eating non-stop. (If nothing else, one can always peel and freeze brown bananas, to be used on a later date.) And then there's banana bread.
